My 10 Favorite Epicure Recipes
First off, this was HARD!!! I truly love Epicure and use it every freaking day so narrowing down to 10 proved a bit challenging. Ultimately, I decided to choose my current 10 favorite Epicure recipes. Yep, it changes. I cook based on my mood or what I feel like eating (sorry, not sorry family, lol).
For the recipe to make it into the top 10, it had to be super tasty (uh, duh!) and super easy to make. This truly applies to just about everything Epicure puts out, which is awesome. Don’t get me wrong, I love to cook, but hate to spend hours and hours cooking. I just don’t have the patience or time to do that. Really, the only time I’m willing to cook for more than 30 minutes is on Thanksgiving and when I make crepes (which doesn’t happen as often as the family would like).
These are not ranked in any particular order, just what popped into my crazy little brain, lol.

We recently (as in I made this last night, lol) tried Thai Red Curry and let me just tell you, I would have liked the pan the sauce was that freaking good! Seriously, so much better than I could have imagined.
I love yellow curry, but other curries are never that good to me. Plus, cooking with coconut milk is newer for me as well and it hasn’t always gone well, but the Thai Red Curry was the B.O.M.B!!! I’m actually super pissed I only had 1 package because I want to make more right now!
If I hadn’t purchased the 30 days of Simple Suppers, I honestly would have never tried it so I am grateful I did. Now to go buy more, lol.
The recipe suggested putting it over rice, which we did, but the family things it would be better with ramen noodles. Go with what your family likes.

I came across this recipe completely by accident and am so glad I did. It is for Microwave Chicken and Shrimp Jambalaya using Epicure’s Sweet & Sour Stir Fry Seasoning as the “mix”.
I love that I can make this entire dish in my magic cauldron, otherwise known as the Multi-Purpose Steamer. I love that it only takes about 20 minutes to make, AND that you can customize it.
We don’t use shrimp because the boys in our house aren’t a fan (what a bummer!) so I add spicy sausage instead!

#3 of My 10 Favorite Epicure Recipes
Another hit at our house is Tacos, lol. Seriously, my kids (and husband) would eat Tacos every week if I was willing to make it every week, LOL.
I typically make a double batch using 3lbs of ground turkey and 2 packages of Epicure Taco Seasoning. I also add diced red peppers and onions as well, shh, don’t tell my kids, lol. God forbid they eat cooked peppers, LOL.
You might be thinking, cook once eat twice – well sort of. Normally there is only enough leftover for Nachos or a couple of lunches. We are some Taco eating fools up in this house!

One of the seasonal recipes that we absolutely love is the Grilled Caprese Chicken from the Summer Strong Collection. It reminds me of our time in Italy with fresh tomatoes and fresh basil!
The Grilled Caprese Chicken is easy to make, even if you don’t have a grill. You can always cook the chicken on the stovetop or make the oven version. It’s definitely a must-try!!!

Also from the Summer Strong Collection is the Tuscan Chicken Burger. I have always made it with ground turkey (something I normally have on hand) and it’s been fantastic!!! Even the whole family loved them. Make sure to make the Big Burger Sauce too because that stuff is like crack heaven!!!

Azteca Tortilla Soup has become one of my go-to recipes as of late. If I am making this for lunch, I throw in some leftover meat (normally chicken) and a can of black beans. If I don’t have leftover chicken, no problem! Just make it with beans, easy peasy!!!

#7 of My 10 Favorite Epicure Recipes
Something that we tried recently was “Roast” Tuscan Chicken. Yes, it’s well over 100 degrees here and I roasted a bird, lol. Now there is a reason why the word “roast” it in quotation marks. I roasted that bird in my microwave!!! You know what??? It was just as juicy and tender as it would have been had I put it in the oven.
Oh, and it only took 20 freaking minutes!!!! That’s the best part, well that and that I didn’t make the house feel like the outside, LOL.

My daughter loves teriyaki sauce but it is hard to find gluten-free sometimes. Epicure created a Teriyaki Dry Glaze that has made my daughter one happy Celiac!!!! We made the Aloha Chicken & Veggie Kebabs with it and it made me feel like I was in Hawaii!
Now I confess, I didn’t actually do mine as kebabs because I’m lazy, yep I said it. I did grill my veggies and check, I just left the veggies in large pieces and grilled some chicken breasts. It’s easier and less fussy (for me). I love the look of kebabs, but not the work, lol.

#9 of My 10 Favorite Epicure Recipes
One of the easiest meals is Epicure’s Pulled Pork or Pulled Chicken. I love these recipes because I basically need 5 – 10 minutes in the morning to get more than 2 meals later in the day! The recipe calls for 3lbs of meat so we can normally at least 2 full meals, sometimes 3 out of it.
I use it to make nachos, pulled pork/chicken sandwiches, throw extras into Mac & Cheese, etc. The options are endless!!

#10 of My 10 Favorite Epicure Recipes
It’s no lie that I love food from everywhere! We have been fortunate enough to travel to four different continents. One of my favorite locations was Greece, in part because it was beautiful, but also because the food was amazing!
One of the Greek recipes I love from Epicure is Donair (Gyros). It’s super simple to make and more readily available than hopping over to Greece for some tasty Gyros, lol. I also love to make Tzatziki sauce as well using Epicure’s recipe.
