Why eat yellow fruits and veggies is next up on our Eat the Rainbow series. You may remember the acronym ROY G BIV, well that is how I remember the rainbow colors (yes I still say it to myself, lol).
In this post, we will learn why it is important to eat yellow foods, what healthy nuggets they provide us, and some yummy recipes to help us eat them. It’s a lot easier to eat things that are good for us if that taste good.
What do Yellow Fruits and Veggies help with?
Right, like what can these little yellow goodies do for ME, then I might think about popping some of those yellow goodies in my mouth, lol. Don’t we hear this from our kids (if you have them), “why do I have too?” Why is it important to eat yellow fruits and vegetables? When we choose to eat yellow fruits and veggies, these fruits and veggies can help your heart, help fortify skin elasticity, and can aid our immune system.
What do Yellow Fruits and Veggies contain?
When we eat yellow fruits and veggies, they provide us many different vitamins and antioxidants. Some of these are beta-carotene, Vitamins A, C, and B6; lutein, potassium, and folate.
You should definitely grab yourself some mango because not only is it a great source of Vitamin C, but also a great source of fiber – we could all use a little more if you know what I mean🤣.

What are some Yellow Fruits and Veggies?
Yellow fruits and veggies are fairly easy to find at any grocery store or farmers market. However, some may be harder to find, like the yellow watermelon. Some examples are:
- peppers
- squash
- bananas
- pineapple
- yellow pears
- yellow figs
- lemons
- yellow kiwi
- yellow watermelon
- rutabagas/turnips
- corn
- yellow beets
- yellow potatoes
- mangos
I think the most popular ones on this list are corn and bananas and although they are tasty, there are so many more options!!!
One of my personal favorites to use with other item when cooking are lemons. I love lemon chicken and lemon pasta – oh, those are so tasty!! We would get them when we lived in Italy, oh those were the days, lol.
Eat Yellow Fruits and Veggies Recipes
Now if you are going to eat yellow fruits and veggies, it might be helpful to have some yummy recipes to make it a bit easier if these fruits and veggies aren’t your favorite.

Easy Breakfast Option
For breakfast, I often have smoothies and love to change it up or I get bored, lol. This Banana Chai Smoothie is definitely one to try and if you don’t want to use the Power Up Protein Powder (which is freaking awesome) just swap out greek yogurt, about a cup and you should be good.

Easy Lunch Option
I love squash; however, the family not so much, lol. I’m totally making this because it looks divine and out Homestyle Chicken Stew is to die for so I know it will be awesome!!!
Epicure’s Creamy Chicken Stuffed Squash is pure comfort food and would be great to prep and ahead and have for the week! I would swap out the spinach for kale, but I’m just weird like that! If you don’t eat meat, no judgement, just swap the chicken for lentils and your are good!

Easy Dinner Option
I know the lunch option could easily be a dinner option too, but I do have a good option for dinner too! Check out Epicure’s Pork & Pineapple Stir-Fry, it is so simple to make and tasty as well! To keep with our Yellow theme, I would use yellow peppers along with the pineapple. You could even throw in some baby corn if you wanted!
