I had the good fortune to live in Italy for four years and some of my fondest memories are trying different Italian dishes. I always loved how fresh the ingredients were and that there was so much flavor to everything.
Some of the flavors we will be exploring while traveling through Italy I’m sure will be no surprise, like garlic and olive oil. But you will also find oregano, parsley, tomatoes, balsamic vinegar, and more!
6 Easy Italian Recipes
As we start our journey through Italy and exploring easy Italian cuisine that you can do from your own cucina (kitchen) I want you to know that the recipes I will be sharing are super easy and will come together in 20 minutes or less! I love easy meals that also taste amazing!
One of the things that makes these recipes easy is that I get a little help from Epicure. What I love about Epicure is that they have so many different international flavors so you never get bored with what you are eating!
First up is Hearty Minestrone. I have to say, that before Epicure, the only Minestrone I had was from a can (I know, totally not the same). Well, let me tell you, Epicure’s Hearty Minestrone does not disappoint!
Epicure’s Hearty Minestrone has bright flavors of basil and oregano. One of the added benefits is that the Meal Solution Seasoning base is vegan so if your prefer to keep it vegan just add veggies, past, and lentils or if you prefer meat, then add some ground beef.
I have another confession, I have never made regular lasagna – like E.V.E.R! In fact, we used always get a that one brand in the frozen food section, you know you know the one I am talking about. I used to think it was good until I tried Epicure’s Speedy Lasagna. This lasagna has fresh lively flavors of basil and garlic that are always a family favorite in our house.
Epicure’s Speedy Lasagna comes together quickly (I know, duh the name gives it away, lol) and one of the ways it does is by utilizing your handy dandy microwave. Yes, you read that correctly. The recipe also calls for oven ready noodles (which also helps to cut down on how long it takes for the lasagna to come together).
Oh, and if you are gluten-free like we are (Celiac daughter in the house), this dish works with oven ready gluten-free noodles too! Oh, and one more thing, you can totally make a Hearty Lasagna Soup with this Meal Solution
Next up on our easy Italian cuisine trip is Epicure’s Alfredo Sauce Mix. We don’t eat this one enough, honestly. I used to buy the jar Alfredo sauce and although it was tasty, I could barely pronounce all the ingredients. Epicure’s Alfredo is creamy, delicious and tastes indulgent without all the calories and artificial junk!
One of the ways I like to use Epicure’s Alfredo Sauce Mix is to make Skinny Zucchini Alfredo and with summer quickly approaching it’s a great way to use that fresh zucchini. If zucchini isn’t your thing, you can totally swap the zucchini for a veggie you prefer or use regular noodles and then add a bunch of veggies in the dish. Either way you choose to make it, you won’t regret it!
Creamy Pesto Parmesan Chicken
We can’t discuss easy Italian cuisine without talking about pesto. Now this isn’t necessarily your normal pesto, as in a green sauce made with olive oil, basil, pine nuts, garlic, salt/pepper, and parmesan cheese. Don’t worry, Epicure’s Creamy Pesto Parmesan Chicken still has those classic flavors from what you would expect from a classic pesto sauce, just with a twist.
When I make the Creamy Pesto Parmesan Chicken I don’t use spinach like the recipe calls for. Not because I don’t like it but because the boys in the house won’t eat cooked spinach, lol. Boys, what are gonna do, lol. I like to use broccolini or broccoli personally. Still get a pop of green that’s good for you! Oh, you can also make it vegetarian by using firm tofu or chickpeas too.
Tuscan Tomato & Salami Pizza
I know when I think of easy Italian cuisine, or really in any Italian food I think of the pizza, lol. Seriously, I am drooling remembering all the yummy pizza I ate for the four years I lived in Italy. If you love pizza as much as I do, then you need to try Epicure’s Tuscan Tomato & Salami Pizza!
What I love about this recipe is that it is so versatile! You can use whatever your favorite crust is or even use Naan bread for a super quick pizza crust. You can make this in your oven or if your weather is nice, try grilling it!
Chocolate Brownie Tiramisu
I know this isn’t a classic Italian dessert but I had to share. For one, chocolate. Secondly, browny, and finally tiramisu! Oh, did I mention chocolate??? Yes, I am biased, I love chocolate!!
