If you love chicken and need some easy chicken dinners ideas, then you definitely need to read this post! We eat a lot of chicken and occasionally get bored with our go-to recipes, hence the inspiration for this blog post!
I figured if I was in need of some easy chicken dinners, then you might be to so you get to the benefit of my research, you’re welcome, lol.
7 Easy Chicken Dinners
All of these easy chicken dinners are made with Epicure products because it’s my thing. I love, love, love Epicure. It makes all my dinners super easy AND most importantly, super tasty too.

Balsamic Chicken Fingers
This recipes is not only super easy and easy, but totally family friendly! I know I’m an adult, well at least on most days, but I still love me some chicken fingers, lol.
So what makes Epicure’s Balsamic Chicken Fingers qualify for an easy chicken dinner. First off, to make this recipe, it only takes 6 ingredients to make. I totally dislike recipes that take a lot of ingredients because I have a tendency to forget something, lol.
It is also easy to make this a complete meal by adding a side salad to your menu, which is also super easy to make.

Chicken Zoodle Soup
At this time of year, you know when it’s cold out and that icky white stuff is on the ground, I love a good hot soup. It just warms you up from the inside out!
Like before, Epicure’s Chicken Zoodle Soup also has minimal ingredients, like only 4. Now you might not have a mandolin, which is OK because you can find zucchini noodles in a lot of stores already cut for you and there is no shame in helping out your meal prep game!
This is a great recipe to make when you have leftover chicken and some veggies that need to be used up quickly! Throw in some potatoes or serve with some really good bread and you will have a complete meal.

Sheet Pan Chicken Souvlaki
I don’t know about you, but I love a good sheet pan meal. It makes clean up super easy, my favorite! Epicure’s Sheet Pan Chicken Souvlaki is one such easy sheet pan meal! Just like the previous meals, this recipe only calls for 6 items to make it and one of which is the pita that you wrap the meal in.
If you follow this recipe as is, it is a complete meal and nothing else would be needed unless you wanted it!

Chicken Stew Pot Pies
This recipe uses a few more ingredients than above, but I have a few hacks that help make it even easier. Don’t get me wrong, the recipe is super easy on it’s own, but I love to tweak things, plus I had to modify this recipe due to not being able to find gluten-free puff pastry.
Epicure’s Chicken Stew Pot Pies tastes amazing and is truly a great way to make a homemade pot pie without going through all the work of making a truly homemade pot pie! Winner, winner, chicken dinner, lol.
Now those hacks I was mentioning, I have made this with drop biscuits, and if you can eat gluten, grab those biscuits in a can and it will be even easier. Now if you want to make it as a full pot pie, I use pre-made gluten-free pie crusts (I really, really dislike making my own, lol) and follow the directions for the “guts” of the pie and then bake it.
Which ever way you choose, this recipe is super easy (like mostly chopping) and very tasty to boot!

Rotisserie Chicken
Yes, you read that right. You can make rotisserie chicken in your house which is way cheaper than getting it from the store. Like all of the recipes in this post, this one is super easy, but does require some cook cookware that also makes fast!
Now Epicure’s Rotisserie Chicken only requires only 2 ingredients, how cool is that?! What makes this super fast is that you are utilizing your microwave to make it happen. Now, what if you don’t have Epicure’s Cookware? Well, don’t worry, you can totally still make this in the oven with what you have on hand!
You can totally make this meal for pennies by shopping the sales flyers at your local super market and stock up on whole chickens when they uber cheap. So cheap and easy to make, awesome!!!
To make this a complete meal, serve with a cop of your favorite steamed veggies and some whole grain rice.

Sheet Pan Caprese Chicken
Yep, I added another sheet pan dinner because they are so easy, but don’t worry, it’s totally different flavors and seriously one of our favorites! Perfect when grilling isn’t an options as we do have a grilled version as well.
Epicure’s Sheet Pan Caprese Chicken only uses 7 ingredients, two of which are salt and pepper, so really only 5 in my book. What I love about this recipe, besides the incredible taste, is that you can easily complete this meal with a side salad and some great bread!

Pulled Chicken Nourish Bowl
Last, but not least is Epicure’s Pulled Chicken Nourish Bowl. This recipe is a great way to use leftover Pulled Chicken, which is also easy to make as it is a crockpot meal.
I love nourish bowls because they are totally customizable so you can add whatever your favorite carbs and veggies are can be easily swapped for what the recipe calls for. There are a few more ingredients than some of our other easy chicken dinners, but I think it still works for our easy dinners list!
