I have dabbled in the Vegan arena and occasionally make vegan meals, but normally that is more by accident than by design. However, I do have several friends who are vegan so I do like to experiment so that I know I can make something yummy that everyone can have!
Why Easy Vegan Dinner Ideas?
I have more and more friends that are choosing to become vegan and Epicure also offers a lot of vegan options so it seemed fitting to start exploring more vegan meals. Will I become vegan, probably not. However, I do try to get my protein from more than just animal sources and let’s face it, I love to cook (or I wouldn’t be in the food slinging business) and try new dishes!
Easy Vegan Dinner ideas
1. Vegan Taco Filling
Our first recipe is Vegan Taco Filling! I know, you probably already have a go-to vegan taco recipe but incase you don’t, I just had to share this one. It’s super easy to make as there are only a handful of ingredients and it only takes 5 minutes to make! I’m all about the quick and easy meals, lol.
This recipe does use nuts as part of the filling so if you can not have nuts, then beans or lentils would be a good alternative! Since we like spicy, I would totally add some spicy peppers to my tacos, lol.
2. Vegan Lentil Shepherds Pie
I love Shepherds Pie, it was total comfort food when I was growing up. Epicure has a few different options depending on what you prefer, but this Vegan Lentil Shepherds Pie is super yummy and will totally warm you up on a cold day!
This recipe comes together pretty quickly, in just 20 minutes and is less than $2 per serving!! One of the reasons this comes together quickly is it calls for canned lentils, not I have not looked for these in the store, but if you can’t find them just prep them ahead of time so they are ready too use.
3. Pad Thai
I have made this version of Pad Thai some vegan friends of ours and it turned out great! I just omitted the chicken and added edamame to it since we aren’t a huge fan of tofu, but that is always an option. I also tend to stay away from a lot of the veggie meat alternatives because my daughter is a Celiac and many have gluten in them.
I also omitted the egg and just added more veggies. I normally don’t use frozen veggies and throw in whatever I have on hand, especially if it needs to be used up.
Pro Tip – since we had vegans and carnivore’s at the table, I did make some chicken on the side to serve with it and just seasoned it with some asian seasoning so the flavors would meld with the Pad Thai.
4. Tangy Veggie Chili
I love a good hearty dish, especially when it is cold out! I live in Vegas so it’s normally not that cold, but the temps drop from time to time for us. Epicure’s Tangy Veggie Chili is amazing!! The only thing I normally change is the mushrooms since the boys won’t eat them, lol.
I love topping my chili with cheese (you can obviously omit this or swap for vegan cheese), onions, jalapeños, and greek yogurt (swap for a vegan alternative).
This recipe also takes about 20 minutes to come together and is just under $3 per serving. You can make this cheaper if you use bag beans that you process instead of canned. It’s still a cheap to make either way and chili is always delicious!
5. Thai Coconut Soup
I absolutely love Epicure’s Thai Coconut Soup, it was a new addition in their last catalog launch. The recipe calls for tofu, but I swap that with a can of chickpeas and it comes out perfectly. The flavors are amazing with some hints of coconut, lime, and ginger.
I sometimes also use kale instead of bok choy. Feel free to put in your favorite veggies. I also add in baby corn because my daughter loves it.
This can be made in the microwave with out Multipurpose Steamer or on the stove top and still come together quickly in just 20 minutes!
6. Crispy Crunchy Lettuce Wraps
The Crispy & Crunch Lettuce Wraps are another new addition Epicure launched in their recent catalog. Now this specific recipe does not have a vegan option, but you can easily swap the ground pork for a veggie meat alternative, lentils, or chickpeas. I have tried it with chickpeas and it was very tasty! Chickpeas are my go-to no meat alternative because I normally have them on hand and they absorb flavors pretty well.
