One of my favorite items to cook when it is cold outside is soup, so I rounded up 7 easy fall soup ideas for you, just in case you are like me. There is just something cozy about curling up with a hot bowl of soup when it’s cold outside – it warms the soul!
6 Easy Fall Soup Ideas
If you live anywhere other than the Southwest, you probably are seeing cooler temps and gorgeous fall colors. I’m in Las Vegas so we aren’t there yet, but mentally I am so ready for fall!!! So much so, I am thinking of some of my favorite cooler weather food items I love to make, one of which is soup.
I can totally make soup from scratch; however, if I don’t have to I don’t, lol. I am all for “semi-homemade” and besides, who couldn’t use a little help in the kitchen!
I use Epicure to help me with my semi-homemade soups! You can totally tailor these soups to your own personal flavor preference – which is just one of the many reasons I love Epicure!
I know that soups and stews are not the same; however, in my mind anything that has a liquid base and is served in bowl is a soup so I use the word “soup” interchangeably.

Hearty Lasagna Soup
We recently made Epicure’s Speedy Lasagna as the Hearty Lasagna Soup and it was so good! We served it with homemade garlic bread (Epicure’s Garlic Aioli is perfect for making your own garlic bread).
The Hearty Lasagna Soup has fresh, lively flavors of basil and garlic which are always a family favorite. You can easily add chicken or ground beef to your Hearty Lasagna Soup as well.

African Sweet Potato Stew
Epicure’s African Sweet Potato Stew has a mild curry flavor with a creamy coconut sauce. It is very tasty and has just a bit of heat to it. You can totally swap the coconut milk for regular milk if you choose.
If you want to make it Vegan, add ground black beans. If you prefer meat, ground chicken or turkey are great additions, or do a mix of both!
If sweet potatoes are not your favorite, you could swap them out for regular potatoes or yams.

Surf ‘n Turf Stew
This hearty stew uses Epicure’s Home-Style Chicken Stew as its creamy base. Instead of adding chicken, add some jumbo shrimp and/or scallops and you instantly have a hearty Surf ‘n Turf Stew!
If you’re a handy baker, you could totally serve this in a bread bowl, or maybe find a local bakery that has some as well.

Hearty Winter Minestrone
Epicure’s Hearty Minestrone Soup has a Vegan base with bright flavors of basil and oregano. You can use fresh or frozen veggies. You can keep it Vegan or customize it by adding in chicken or ground beef.
You can also add pasta shells and lentils to this soup to make it heartier and serve with some fresh bread!

Azteca Tortilla Soup
This is one of my favorites! Epicure’s Azteca Tortilla Soup has robust flavors of bell peppers, cumin, garlic, and chili!
Again, like everything Epicure offers you can customize this by keeping it Vegan and adding black beans or using some leftover Pulled Chicken or Pulled Pork, shrimp, or ground meat.
We love crushing some tortilla chips on top of ours, adding some fresh jalapeños, shredded cheese and a squeeze of lime!

Home Style Chicken Stew
I love pot pie and make it every year with leftover turkey from Thanksgiving. Epicure’s Home Style Chicken Stew totally reminds me of my homemade turkey pot pie with its rich, creamy base. This is the epitome of comfort food!
