5 Epicure Inspired Sheet Pan Dinners

Do you love a good sheet pan dinner? You know, where you can pile all/most of the ingredients onto the pan, pop it in the oven and have a yummy complete meal with minimal cleanup!! In comes 5 Epicure Inspired Sheet Pan Dinners to save the day!! That’s my kind of dinner, especially now that it is getting cooler (well, relatively cooler in Vegas, lol) in the evenings so I don’t mind running the oven.

What are Sheet Pan Dinners?

Like I mentioned above, you plop your protein, carb, and veggies on one pan (two if you have a bigger family) and make everything at once in the oven!! Easy, Peasy, Lemon, Squeezy!!!

Now, not everything HAS to go onto the sheet pan. Sometimes you may want a different side, like salad or fresh veggies so you wouldn’t put those in the oven (yuck!).

Do you need a specific sheet pan?

Good question, the simple answer is no. However, I do have some recommendations that will make clean up a lot easier, trust me!!

One way to make clean up easier is to line the sheet pan with Epicure’s Bake and Roll silicone (food grade) liner. Keeps the sheet pan clean (unless something bubbles over – you know that happens sometimes, lol) so nothing gets all crusty and sticks. Pop it in the dishwasher, or wash in the sink and it cleans up easily!

Another option is to use parchment paper. I normally have this on hand, but it isn’t as effective as the Bake and Roll liner. Parchment paper is thinner, excessive moisture will get through, and it’s a one time use. Basically not as eco-friendly if that is your thing.

So what makes them “Epicure Inspired”, well, Epicure came up with the recipes AND they use their awesome ingredients. All the recipes are on Epicure’s website. I will add suggestions, etc. below or you can make it how the recipe recommends. As always, do what will work for you! Feel free to change up the protein, veggies, carb, etc.

Sheet Pan Fajita Dinner

  • Choose your favorite fajita protein. My preference is shrimp, my hubs are steak and chicken. The awesome thing here is you could do all of them and more!
  • I also love tons of onion and peppers, so I would probably add one more pepper and at least a full onion.
  • I would definitely make Epicure’s Guacamole and Poco Picante as toppers along with some jalapenos!!
  • As the picture shows, wrap your tortillas in foil and throw them in right before the end to warm them up!
  • Making sheet pan fajitas is so nice for clean up because you don’t get the grease splatter. I mean, when I make them on the stovetop, there is a lot of clean up which is a pain!
  • Purchase Items: Sheet Pan, Fajita Seasoning, Poco Picante, Guacamole

Chicken Pizza

  • The recipe calls for making your own crust from scratch; however, if that’s not your thing, I have 2 options for you:
    • Purchase Epicure’s Gluten-Free Pizza Crust Mix, it’s uber easy to use and tastes awesome!! With one mix, it yields 2 – 1/4 sheet pan pizzas!
      • Bonus: you get 2 pizzas so you can have multiple toppings!!
    • Purchase a ready-made crust, try for something whole grain, with minimal ingredients to keep it on the healthier side.
  • I have used Epicure’s Marinara Seasoning to make pizza sauce and just added crushed red pepper because we are spicey people, lol
    • Hack: make a batch of pizza sauce and freeze in individual portions – cook once, eat multiple times!!!!
  • Purchase Items: Gluten-Free Pizza Crust Mix, 3 Onion Dip Mix, Marinara Seasoning, Bake & Roll, Sheet Pan, Sea Salt Grinder, Multipurpose Pot (8c)

Greek Chicken & Potatoes

  • This is definitely a “traditional” sheet pan dinner. Everything is cooked together on the sheet pan!
  • I would add more garlic, but I’m the kind of cook who adds garlic until my ancestors whisper for me to stop, and then add one more, lol. I mean, if I ever encountered a vampire, I think I would be good, just saying, LOL.
  • For variety, I have been known to swap regular potatoes for sweet potatoes or even white sweet potatoes (did you know those existed? I found out about them about a year ago!)
  • Chicken thighs are great as they are super flavorful and tender; however, if they aren’t your thing, you can easily swap out for pork chops or boneless/skinless chicken breasts – just adjust the time accordingly.
  • Purchase Items: Bake & Roll, Sheet Pan, Greek Dressing Mix

Buffalo Chicken Thighs with Celery and Blue Cheese Salad

  • Again this recipe calls for chicken thighs, but if you want wings, have wings! That’s what I love with our products, they are so versatile!!
  • For the salad, my boys are Blue Cheese haters, so I would swap for Ranch. Epicure’s Ranch Dressing mix is amazing! Also, here in the states, we can’t get Epicure’s Blue Cheese Dip Seasoning.
  • I would also have to increase the volume on this recipe because my family (2 adults, 2 teenagers) can SMASH some Buffalo Chicken in any form!
  • Purchase Items: Sheet Pan, Buffalo Wings Seasoning

Chicken and Cheese Quesadillas

  • This yummy dinner comes together in less than 20 minutes and is an awesome way to use up leftover chicken (or any other protein).
  • I would swap out the whole-grain tortillas since our daughter is a Celiac and we eat gluten-free. You can use corn or gluten-free tortillas.
  • We love spicey, so I would add sliced jalapenos as well.
  • You could also make some guacamole with Epicure’s Guacamole Dip Mix (and why wouldn’t you want to add Guac?!?!?)
  • Purchase Items: Bake & Roll, Sheet Pan, Guacamole Dip Mix(I recommend it), Poco Picante, 3 Onion Dip Mix
