Are you looking for some easy keto dinner ideas? If you are, then you need to check out these 5 easy keto dinner ideas I found using Epicure seasonings! Epicure has a lot of recipes on their main website; however, there isn’t a “keto” search function so I went through a bunch of recipes looking for low carb options that would also be packed full of flavor!!!
They are also easy to make, my favorite! There is a little bit of everything from salmon to meat balls! When the recipe calls for items that don’t follow the keto requirement, I will make keto recommendations (but if you are a die hard keto follower, you probably can tweak a recipe easier than I can.
5 Easy Keto Dinner Ideas

Greek Salmon & Beans
First up is Epicure’s Greek Salmon & Beans. What I love about this recipe is that it comes together in 15 minutes (woohoo!!!), costs less than $2/serving (un, heck yah!), and is a one “pot” meal!!! I don’t know about you, but I am not a fan of dishes so any meal that limits the amount of dishes I have to do, I am a fan of, lol.
This dish only have 10g of carbs (4g of fiber, 5g of sugar). Now if you prefer to not steam your meal, you could totally make this as an easy sheet pan meal. Don’t like salmon, swap pork or chicken. Don’t like fresh beans, swap broccoli or cauliflower (or your favorite veggies) and you are good to go!!!
Now to “complete” this meal, Epicure recommends serving with 1 cup of rice (swap for cauliflower rice) or smashed sweet potatoes (you could swap this for mashed cauliflower to make more keto friendly).

Sheet Pan Fajitas
Next is Sheet Pan Fajitas. I love me some fajitas and like to order them when we are at our favorite Mexican restaurant. I prefer to get shrimp and my husband prefers chicken. However, use whatever protein you prefer: shrimp, fish, chicken, steak, etc – or better yet – do a combo!
I also love all the peppers but love to add onion and tomatoes too because they are just so tasty when they are roasted! Of course, just because this is a sheet pan dinner, doesn’t mean it has to be. Totally cook it on the stove top if you want.
Ok, you are probably wondering about the carbs, well according to the recipe it is 36g (2g fiber, 3g sugar), wait, wait, wait!!! That is only because they include the tortilla’s in this so if you omit those or use a keto friendly version, the carbs will be super low because it is just meat, veggies, and some seasonings!!
To complete this meal, Epicure recommends 1 cup of mixed greens with 1 tsp of your favorite clean dressing. If you don’t want that, maybe make some veggie chips to have with some fresh salsa or whatever you would prefer for a side of veggies.

Easy Mexican Frittata
We love to have breakfast for dinner a couple of times a month, and this Easy Mexican Frittata is just that, easy!!! It takes about 10 minutes to get dinner on the table and that is something I can get on board with! Oh, it’s just over $1 per serving too – even better!!!
As with all things Epicure, you can totally customize this. Love bacon? Then throw some in (I would add already cooked bacon). Want ham or chorizo? Throw some of that in! I always add cheese and I normally don’t go for the low-fat kind.
This super easy dish has only 6g carbs (2g fiber, 1g sugar) so it is super low carb! To complete the meal, either serve with a side veggie dish or add more veggies to the dish itself.

Sheet Pan Ginger Salmon
Another super easy keto dinner that comes together in just 15 minutes! Epicure’s Sheet Pan Ginger Salmon is obviously a sheet pan meal, but during the summer I could see this as a super simple grilled dinner as well. I love braised, broiled, or grilled bok choy – just adds another dimension of flavor.
This simple and easy keto dinner has 10g of carbs (1g fiber, 7g sugar). It is a rather high sugar count which could be fixed by omitting the honey or maple syrup and replacing it with something keto approved or leaving it out all together.
To balance your plate or complete the meal, I would serve with riced cauliflower.

Walnut Meatballs
These tasty Walnut Meatballs can be used in a wrap, served over rice, put over some veggie noodles, as an appetizer, or really just about anywhere you would add regular meatballs! These take 20 minutes to make but are only about $0.20 per serving which is super cheap!!!
These get cooked in the oven so I would probably double the batch so I could freeze them and have them on hand when needed. Here’s and awesome tip I recently learned: flash freeze them, meaning cook and cool them, put them on a lined cookie sheet separated and put them in the freezer for about an hour or so. Then when they are firm, put them in a large freezer bag and they shouldn’t stick!
These Walnut Meatballs are super low carb as in only 1g of carbs per serving and 0g of fiber/sugar.
How would you eat these?
