I don’t know about you, but I could totally use some easy dinners this time of year. I know we are in the middle of COVID so we don’t have as many commitments, but as much as I love to cook, I’m kind of “over” it, lol. That sounds pretty bad coming from someone who get’s “paid” to sling food for a living, lol.
I’m tired of planning, I’m tired of cooking – but I still have to. I want to go out to eat more and grab something quick from drive through but our options are limited due to our daughter being a Celiac – and yes I am whining and I know it, lol.
12 Days of Easy Dinners
I ran this in my group for the first 12 days of December and it was super helpful for me and them. I even followed it 90% of the time (things came up like orthodontist apts – kids, what are you going to do) so not only did I have my meals planned for me, I also had easy dinners to make!
Easy Dinners – Taco
I won’t go through all the corny things I came up with in my group to match up the 12 Days of Christmas to my 12 Days of Easy Dinners (totally funny though, just saying). I was also running a fundraiser for Giving Tuesday so I started off featuring some of the Meal Solutions from Epicure’s Fundraise Box.
As it was a Tuesday when I started, I opted to feature Epicure’s Taco Seasoning (duh, Taco Tuesday). Tacos are always a big hit at our house so we have them 2-3 times a month (easily) and if there are leftovers, we use it to make some Epic Nachos!
Easy Dinners – Mac & Cheese
Another classic favorite is Epicure’s Mac & Cheese. What makes this a favorite (besides the taste) is that Epicure also donates a meal to those in need for every Mac & Cheese purchase! I love our company!!
Easy Dinners – Sweet & Sour Stir-Fry
You can easily sub what ever veggies you prefer and I have even heard of people using peaches instead of pineapple and loving it! Which would you prefer?
Easy Dinners – Mocha Pudding
So have you every had dessert for dinner? Seriously, you haven’t? I am totally shocked and giving you some serious side eye right now if you answered no, just saying.
Well I totally opted to make Mocha Pudding for day 4 because I’m grown and can do what I want (yep, I’m 5 in an adult’s body, loll).
I used Epicure’s Chocolate Pudding Mix, added 1 cup of chilled almond milk and 1 cup of chilled coffee, whisked it all in a chilled bowl (makes the pudding set faster – hello, mocha!!) and viola I had some easy, peasy mocha pudding! You should try it, just saying.
Easy Dinners – Shepherd’s Pie
Oh, Shepherds Pie, a childhood favorite! I know it’s not everyone’s cup of tea, but I’m from the Midwest and it was a staple back in the day! Now, I don’t make it the way my Mom did (not that hers was bad), I use Epicure’s Shepherds Pie Seasoning and couldn’t be happier with how it turns out.
You can also make this vegan if that’s your thing (who knew!) and I end up eating way more veggies than the way my Mom made it.
Easy Dinners – Sloppy Joe
Next up is Epicure’s Sloppy Joe Seasoning. It was the first time I made it and it was good. I did doctor it up though (I used only one package of seasoning and 2lbs of meat so it needed more) by adding in ketchup (I didn’t have as much tomato paste as required for the recipe), mustard, and some vinegar (I like a little bite in mine). I would totally make it again too.
I like to top my Sloppy Joes with a slice of cheddar cheese and pickles (like a lot of pickles, lol), how about you?
Easy Dinners – Beef Stroganoff
One of the first meals I tried from Epicure was their Beef Stroganoff and I completely fell in love with the ease and taste of Epicure’s Beef Stroganoff. It took no time at all to make and it came out great, even my picky teenage son loved it, and that is saying something!
Easy Dinners – Southern Baked
One thing I missed when our daughter was diagnosed with Celiacs was a good ol’ Shake-n-Bake. Until Epicure came along, it was something I just didn’t make any more because I couldn’t find it gluten-free anywhere.
Epicure’s Southern Baked is so much better than store-bought Shake-n-Bake, you definitely need to try it. Also, if you don’t have a big family, 1 package can be stretched into two meals as the recipe calls for 2lbs of meat!
I love using this and cooking it in my air fryer to get a yummy oven “fried” meal!
Easy Dinners – Azteca Tortiall Soup
Every now and then, I love a good soup, especially on those cold days. Yes, I live in Vegas and yes we do have cold days, lol. One of my favorite Epicure soups is their Azteca Tortilla Soup. I have used this seasoning to make a Saucy Chicken and some great Wraps too so this seasoning (like all of them) can make more than what you think!
Easy Dinners – Tuna Casserole
I know my husband grew up eating Tuna Noodle Casserole, and loved it. His mom would put crumbled Ruffles on top and everything. When we had to go gluten-free it was something I quit making until Epicure came out with their Tuna Casserole Seasoning.
I love the creamy base for the Tuna Casserole and if tuna isn’t your thing, you can totally sub chicken or even some leftover turkey for that matter – it’s totally cool, we won’t judge you. In fact, even though I like tuna, I don’t cook with it much and normally use chicken when I make the Tuna Casserole.
Easy Dinners – Beef & Broccoli
Wow, we are already on number 11, how cool is that! Next up is Epicure’s Beef and Broccoli. I have to say, the first time I had it, I wasn’t a fan (yes, I just said that). However, I wanted to give it another try before I made up my mind.
The second time I made it, I let the seasoning sit for bit before I added it to the meat (which I should have done anyway) – made a huge difference! You know, actually follow the directions and don’t skip stuff, LOL.
Easy Dinners – Heary Minestrone
We have come to the end of our 12 Days of Easy Dinners and our final one is another soup. Hey, Winter is HERE and I hate being cold – in comes soup to the rescue, lol.
I absolutely LOVE Epicure’s Hearty Minestrone Seasoning!!!! That and some good bread (gluten-free of course) and you will be all warm and toasty on the inside.
